Deleting Links
I'm sure there must be an easy way to do this. Say I have a word or pharse that contains a link (either internal or external). How do I remove the link without deleting the word or pharse?

Select the link text and type the word or phrase again, or copy (Ctrl+C) and Edit | Paste Special | Paste Text (Ctrl+Shift+P).

I was hoping for an internal command. Something I could have on a toolbar vs doing it manually

There isn't a built-in command for that. Ctrl+C, Ctrl+Shift+P should be faster than clicking a toolbar button. Or put the Copy and Paste Text commands next to each other on a toolbar and use two clicks.
